High on a ridge in the Apennine hills, la Collinaccia is a large, comfortable house that has been carefully restored by the owner of the Collina estate. The views are astounding in any direction, ranges of hills going on forever. Emilia Romagna is the region of good cooking: Tortellini, Parma ham, Parmesan cheese, Bolognese ragu', ravioli are all from this area.
