History and Pasta-making round Calci and Lari

Discovering a breathtaking area around Pisa, between history, culture and gastronomy. We will walk through ancients paths of monks and soldiers and we will learn the modern touch of the ancient culinary tradition of italian pasta

In the morning we will go towards the so called Valle Graziosa, a plain overlooked by the Monti Pisani, where in the Middle Ages a wonderful Carthusian Monastery was build where monks lived untill the end of last century. This complex was later expanded owing its present appearance to work carried out in the XVII and XVIII century.
At lunch time we will stop in a local restaurant for a light appetizing tasting menĂ¹
Our visit will go on towards Lari. Nestling amongst the Pisan hills, the little town of Lari can safely lay claim to having Etruscan origins. Because of its dominant position of the entire valley of the River Arno the Castle was an important military stronghold of the Pisan Republic.

Our walk will lead us through the narrow streets of the castle and into the hidden secrets, and we will discover the different fonctions it had through the century. We will visit Pietro Leopoldo hall (the so called Agonies Hall), the underground, the prisons and the couryard.
We will end our trip in a small nice pasta factory where we will see how pasta is made and maufactured, still using the traditional methods that made italian pasta famous all over the world.
